Potato salad with a twist 

For 2 persons: (approximately 40 minutes)

-        5 middle sized potatoes 

-        1 onion 

-        Pickles to taste 

-        Bacon (100gr) 

-        1 boiled egg 

-        Mayonnaise 

-        Dijon mustard 

-        Cappers to taste 

-        1 Spring onion 

Boil the potatoes and the egg and let them cool. Then cut them in smaller pieces. Prepare the bacon in a very hot pan without any oil as it has its own fat. Wait until it is crispy and cut it in small pieces. Chop the two different types of onion and mix them with the potatoes, the egg and bacon once they have cooled down. Slice the pickles into small pieces and add them to the other ingredients along with the cappers. Mix one table spoon of mayonnaise with one tea spoon of Dijon mustard, then add pepper to taste. You could also add some sweet paprika. Add the sauce to the mixture and add salt after you have tasted it with the cappers. Put the salad in the refrigerator for 15 minutes.

++ a nice extra would be some jalapeno pepper or cheddar!
