Ingredients for 2 persons:

  • 400 gr cleaned spinach 
  • 250 gr rice 
  • 1 onion 
  • 1 leek
  • 1 piece of garlic
  • 1 lemon 
  • Olive oil 
  • White wine 
  • Salt & pepper


Steps:

Prepare the rice in boiling water.  While you wait for it to get ready, chop the onion, leek and garlic and cook them in a pan with some olive oil.  Add the spinach in the pan. When it starts to cook add some salt and pepper and half of the lemon. When it is ready add some wine (half of a shot) and leave it until the alcohol has evaporated. Strain the boiled rice and add it in the pan with the rest of the ingredients. Add the other half of the lemon (or even more, if you prefer) and season again with extra salt and pepper according to taste.


A nice extra tip would be to add mushrooms and make it an even more filling dish.
